Baking technology using ceramic coatings and infrared radiation.

The use of ICT baking technology in multi deck ovens significantly improves baking efficiency, has a beneficial effect on product quality and reduces energy consumption.

Electric heaters and the inner surfaces of multi deck baking ovens are coated with a layer of carefully selected ceramic with a maximum thermal radiation power in the range of infrared wavelength between 3-6 microns.

Infrared heat quickly penetrates directly into the center of the product, which therefore reaches the desired temperature of the center faster. Protein denaturation and starch gelatinization occur faster in the dough. More free water is bound, which reduces baking losses by up to 30%, and consequently results in better freshness and juiciness of the product.
